Kitchen Knowledge
How things are made, why they fail, and how to keep them working for decades. Care and product knowledge live here together, because they are the same conversation.

What this is for
Kitchen Knowledge is where we write down what we learn while checking equipment: what a base is actually made of, why a coating lifts, what a hob really asks of a pan, and what makes a cup of coffee better or worse.
Both stories below began as questions asked in the shop. We keep them short and keep them accurate, and add to them only when there is something new worth saying — so a section that looks thin today is simply one that hasn’t run out of things to check.
